What I Ate Wednesday - Vegan MoFo 2013 Edition.

I see a lot  of super fancy and super healthy days on What I Ate Wednesday posts but that's not what I'm all about. This is just a day in the life of a regular grrrl who's trying to clear out her fridge! I'm basically showing you what a slightly lazy vegan might eat on a day spent writing blog posts, reading blogs, masterminding MoFo giveaways and catching up with a weeks worth of Neighbours!

I started the day with an Alpro Fruity & Creamy peach yoghurt and a chopped banana with a glass of freshly squeezed OJ on the side.


I'm pretty fussy about yoghurts and the fruity & creamy style Alpro is the only kind I like, those and Sojasun but you can't buy them here.

Unsurprisingly I was hungry within a few hours of eating that so I made a sandwich and gathered some grapes and the last of the Dandies marshmallows from our Portland/Seattle trip.


My sandwich is made with Pizza flavoured Violife slices, margarine and a Warburtons sandwich thin. I think that anyone could probably make this sandwich! Violife sent me every flavour of their cheeses to review recently and I'm diligently working my way through all 10 packs before I write about them. Pizza flavour is definitely up there with my favourites.

A couple more hours passed and it was time for something a little more substantial, enter the baked potato.


I nuked this in the microwave for five minutes before letting it crisp up in the oven at gas mark 9 for 5 minutes each side. I heated up some Heinz baked beans and then fancied the whole thing up with a little of my favourite Vegusto cheese, the Piquant incase you're interested!

When dinner time rolled around I was starving again so I munched on a handful of Trader Joe's Dark Chocolate Covered Mini Pretzels whilst I cooked. I'm down to my last bag so I'm extra glad I'm going to be back in the US at the end of next week.


Because I'm about to go away I'm trying really hard to clear out my fridge and for some reason I have a lot of leeks in my veggie drawer. I was racking my brain for leek based recipes when Nick (that's my husband for new MoFo readers. Hi!) suggested the Leek & Bean Cassoulet from Veganomicon. The man's a genius.


I had no suitable beans and I couldn't be bothered to make the biscuits so I subbed Soy Curls, pre-soaked in veggie stock and thoroughly squeezed, and made a stovetop version. This was delicious and it even used up all of our potatoes, I used to make this dish about fortnightly when my cookbook collection was smaller and I loved this reminder of an old favourite.

According to my MoFo plan today's WIAW was meant to show you guys what a British vegan eats on an average day. I've failed pretty miserably at that because I ate, um, three things that aren't available here at all and one that's only currently available via mail order! I'll try to be more British next week!

  4. Well heinz baked beans are about as British as you can get so you win on that one! Jacket potato + beans or beans on toast never gets old for me. Oh and I love that vcon recipe. With soy curls sounds even better.

  5. Please stop with the pretzels already; I tell myself they're not vegan so that I have an excuse to avoid them!! Then you mention them again and I have to start all over.

    As for being British, you get credit for:
    putting beans on a potato (?)
    using the word "fortnight"
    spelling favorite with a U, and yogurt with an H
    eating all kinds of cheese America hasn't seen yet

  6. Sojasun make a fruity and creamy style? Wait, are they the ones in glass pots? I used to really love those! There used to be a great organic grocery near where my parents live which had them (and quite a few other things which I've never seen anywhere else in this country), but that was years ago.

    1. Oh no, these are Alpro. I meant that the only other yoghurts I like are Sojasun but they aren't fruity & creamy like these just delicious and unavailable in Brighton!

  7. Ooh lovely soy curls. I've just finally finished the bag you sent me ages ago for Vegan Snack swap. I totally eeked it out making just one a portion at a time, haha. Also loving the side of marshmallows with lunch :)

  8. This is silly but I dig your Hello Kitty cup. :) I might be late to the party on this, but did Dandies get bigger?! Last time I bought them they were more mini-marshmallow sized.

    1. Not silly at all, I also dig my Hello Kitty cup! And YES, Dandies totally did get bigger - sometime between my US visit last September and this May if we're trying to put a date on it! They're definitely yummier now too.

    2. Interesting! I haven't bought them in a while because Sweet & Sara is king of the vegan marshmallow world here in New York. I will have to give the new ones a try sometime.

  11. I always make baked spuds in the microwave and then crisp them up in oven - it's such a timesaver. Vegusto piquant is my favourite cheese too, I'm so glad we can get it in Australia.

  12. I wish we could get Alpro here! They have it on KLM and I think I ate the entire plane's stash when I travelled with them. I'm super jealous of how often you're able to head over to the US and I can't wait to see what you get up to there this time. I think I need to find a way to move to the UK so I can travel more!

  13. Sometimes when I look at other people's blogs it reminds me that a lot of vegans eat way more vegetables than I do. I just like sugar y'all. I mean I eat kale too, but not for every meal!

  19. I'm so jealous of your Pizza flavored cheese and Alpro yogurt! And now I'm totally having a baked potato with beans for dinner tonight. You're still more British then I am!...and this has absolutely nothing to do with that fact that I'm Canadian ;)

  20. A grilled cheese sandwich sounds pretty fantastic right about now. So do chocolate covered pretzels. Also, I love the typical meals (nothing too crazy or complex).

  23. *grin* I think that cassoulet was one of the first vegan recipes I fell in love with back when I switched over, it had that satisfyingly hearty feel I wanted on a rainy winter night. :)

  24. Alpro Soya and Sojasun are my favorite including the Sojasun vegan flans! Oh my goodness, I love Violife, I tried them and their pizza cheeze block is amazing, used them on pizzas and quesadillas.
